When ordered, we wondered just what we were getting. When it arrived, we wondered just what we were getting in for – or rathar I did, because the rest of my dinner companions made it perfectly clear that it was my dish to try first. After only one of them followed suit in trying, it was also clear that it was mine to finish.
Slick, salty, chewy, tangy, fishy with a hint of lemon. That just about sums it up. Another one that I probably won’t order again but would not leave on a plate if presented with it.
And what it is: Ika no shiokara with squid ink…. Or in the bluntly literal translation on the English menu: “Salty fermented cuttlefish guts with squid ink” or perhaps a little more delicately: “Pickled cuttlefish in squid ink”
